Preparation and cooking of the perfect sea food is as easy as A B Sea! A “hands on” programme that will take you through all aspects of quality, preparation and cooking the perfect fish. Learn how to prepare shellfish etc and create accompanying stocks and sauces. So if you don’t know your cockles from your clams or your slip soles from your Dover and want to expand your fish knowledge, this informative course is perfect for you.

Students will cover:

  • Seasonal fish – Quality points, scaling, filleting etc 
  • Preparation of shellfish
  • Cooking mussels and scallops 
  • Fish stocks and sauces 
  • Soups and poaching bouillons  

Course includes lunch and beverages throughout the day.

Academy chefs and recipes are personally approved by Jean-Christophe himself.
